I have never had peasant bread. I’ve never heard of peasant bread. And until today, I never considered making peasant bread. After stumbling across this recipe I was curious to know what peasant bread was. “Peasant bread can refer to a variety of breads, most often European in origin, that make use of whole wheat flour, often rye flour, and sometimes other coarsely ground grains to produce a very hearty bread. Such breads are known for their hearty crumb, a bit of stiffness and crustiness, and generally for their coarseness as compared to breads made with more refined flours.” (Wisegeek.com) Alexandra Stafford of Alexandracooks.com certainly talks this recipe up enough. In fact she sold me on trying it! It looks and sounds absolutely amazing and I’m prone to believe that she may have in fact found the perfect peasant bread recipe. She even intimates that no other recipe on her site can measure up to this one so here it is, her peasant bread recipe. I’d love to know if you’ve tried it. God bless!
