We have been fixing this soup for a few years and I have to say that it is definitely on the family favorites list. The great thing is that this is fairly simple and straightforward. We prefer to use Buitoni pre-made tortellini which helps speed things up when we come in from chores on a cold winter evening. If you prefer to only use homemade ingredients this recipe will certainly still work for you. You can even make homemade tortellini. You can also make this early and allow it to just simmer until you are ready for dinner and then add the tortellini and olives. Using the pre-made tortellini like we do, it only takes about 10 minutes to finish cooking this. I hope you enjoy it. Have a great day and God bless!

- 2 Cloves garlic chopped
- 1/2 Onion chopped
- 2 tbls olive oil
- 2 cans beef broth + 2 cans water
- 1 sixteen oz can petite diced tomatoes (drained)
- 1-1/2 tsp Italian Seasoning
- 2 small zucchini
- 1 six oz can sliced black olives (drained)
- 1 pkg cheese tortellini
- Grated parmesan cheese
- In a large sauce pan or stock pot, heat the olive oil on medium heat and brown the sausage links whole. Add the garlic and onion, cook until soft and sausage is done. Remove sausage and slice; drain grease and return to pan. Along with the sliced sausage, garlic, and onion, add beef broth, water, tomatoes, Italian seasoning, and zucchini. Let simmer until 10 min before dinner time (at least 20 min). Add tortellini and olives and cook until tortellini are tender (approximately 8-10 min). Serve.
- This recipe is set-up to be a fairly quick and simple but hearty soup, however, for those who wish to use homemade products they can be substituted in along with homemade tortellini. Either way we believe you will find this soup to be hearty and delicious.
