Ok, ok. I admit I jumped the gun on the oven canning idea. I did not state that it was safe for use in anything other than storage of dry goods and that was just my fault for not stating my case better. But I did later find out that it is not safe for the jars because they can crack or break. So I scratched that idea and went back to the drawing board. Then lo and behold I stumbled across this article from some friends of Lone Star Farmstead. Jo and Eddie Rellime at Homestead Chronicles have a great post on how to use canning jars to store dry goods that are shelf stable without canning or oven canning. They use a jar sealing attachment for their food saver. It’s perfect! It’s exactly what I was looking for. It will allow us to store dry goods in a sealed, stable environment in a safe manner and it will be good for a verrrryyyy long time and the jar can be resealed every time it is opened. I’m super stoked. Now I just need to figure out how to raise the money to buy a food saver and jar sealing attachment. Have a great day and God bless!
