Have you ever struggled with peeling hard-boiled eggs? Ever noticed how much harder it is to get nicely peeled farm fresh eggs? I’ve heard people say to let the egg sit for a week or two and that will help, but to be honest, one of the appeals of farm fresh eggs is the rich quality of the yolk and the egg in general. The longer an egg sits and ages, the more these qualities diminish. I’ve tried all the tips and tricks like vinegar in the water, pricking the egg with a needle before boiling, etc. Nothing helped. But steaming the eggs sure does! We get great quality peels out of eggs just laid hours ago with this method. But rather than take you through it step by step, let me just refer you to The Prairie Homestead‘s write up on this. She does a great job explaining everything. We have a vegetable steamer basket so we use that but her method works great if you don’t have a steamer basket. We made the best deviled eggs I’ve ever had in my life a few nights ago from our farm fresh eggs. Man were they great! So read up, enjoy, and give it a try.
